Gluten Free Split Pea & Ham Soup

Split Pea Soup has always been one of my favorites. You're going to love this tasty gluten free soup. Perfect light dinner on a chilly night.



Ingredients:

2 1/2 tablespoons extra virgin olive oil
1 medium yellow onion, diced small
4 medium carrots, peeled and diced small
2 stalks celery, diced small
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 cups cooked ham, diced small
8 cups gluten free chicken stock ( I like to use Kitchen Basics chicken stock)
1 pound green split peas, rinsed
 

Directions
In a large soup pot, heat olive oil over medium heat.
Add the onion, celery, carrots, salt and pepper.
Sauté until softened, about 12 minutes.
Add the diced ham, stir and cook for 2 minutes.
Add the chicken stock and green split peas.
Bring to a boil , then reduce heat and simmer covered for about an hour or until peas are soft and broken down.
Check occasionally to make sure liquid doesn't evaporate too quickly. If it does, add more stock to thin it out.

* If you want to make this soup vegetarian/vegan, leave out the ham and use a gluten free vegetable stock in place of the chicken stock.
